Fungi are an untapped resource with both nutritive and medicinal potentials,
that have been undervalued and underexplored until recently, but they are now
increasingly utilized in the pharmaceutical and food industries. With the re evaluated concept of using food in prophylaxis of diseases and as therapeutic
agents, contemporary research has been strongly focused on this area, leading
to scientifically supported facts. Since the nutritive properties of edible
mushrooms have been praised in scientific research, an up-to-date literature
review on these properties will be presented so as to evaluate the novel prospects and possible applications of edible mushrooms in the food industry
